American BBQ-ing With McCormick

How do you American BBQ?...

My usual Sundays consist of gathering around the backyard smashing out an incredible Lebanese BBQ with garlic lathered chicken wings, kafta skewers, beef skewers, pomegranate topped tabouli, hummus, baba ghanoush and Lebanese flat bread and half way through a bottle of backyard made Arak.

But deep down inside, I yearn for that taste of smoked ribs & tender pork just falling apart.

Luckily enough, I was invited to an American BBQ Pit Master Class with McCormick Grill Mates at The Willoughby Hotel to get down and dirty with their new American BBQ rubs & seasonings.

Teaching us this much required art was the inked up and energetic Eric Luhning from The BBQ School. An educator and an expert in the technique and cooking style of American, Eric could not stress out enough the importance of fresh, not frozen meat, a well lit barbecue using proper charcoal and a flavoursome rub such as the McCormick Grill Mates American BBQ range.

FAT EQUALS FLAVOUR – Eric repeats, over and over again, requesting that lean ‘fat-less’ meat does not belong anywhere near an American BBQ. Composed of two parts, the beef brisket requires about 1/4 of an inch of fat on it and must have a deep red colour representing its freshness.

Make sure the brisket hasn’t been frozen – if you can’t determine if it has been, simply lift the brisket in the middle and watch the ends bend. If it’s still a little stiff, means its been frozen.
