I like a salad that makes your mouth hum. This one does exactly that.

It’s got punchy flavours. The most prominent being that golden curry chicken, teamed with the crunchy, fresh chop salad, lightly dressed in a limey-fishey-sesamey salad dressing (practically an oil-free dressing!).

FOR THE CURRY CHICKEN
4 CHICKEN THIGHS
2 TEASPOONS OF TUMERIC
2 TEASPOONS OF CURRY POWDER (I LOVE KEEN’S)
2 TABLESPOONS OF FISH SAUCE

FOR THE CHOP SALAD
1 CUCUMBER
1 MINI RED OAK LETTUCE, OR BABY COS LETTUCE
½ RED ONION
¼ BABY RED CABBAGE

FOR THE DRESSING
1 LIME, JUICE ONLY
3 TABLESPOONS OF FISH SAUCE
½ TEASPOON SUGAR
½ TEASPOON OF SESAME OIL

GARNISHES
MINT LEAVES (OPTIONAL)
SESAME SEEDS
LIME WEDGES
