Ever had mum’s lamb or beef cheeks where it was so perfectly cooked and so tender it just fell apart?

That’s exactly what Lady Carolina’s Lechon Asado Pork is like – heritage suckling pig with orange mojo that let off a fireworks of flavours as soon as it enters the mouth.

These non-GMO Peruvian purple corn are grown in Queensland and Lady Carolina in is currently the only restaurant in Australia using it in cooking:) It’s got one of the highest anti-oxidant levels of any fruit and vege in the world.

Not your usual boring creme brûlée or chocolate dessert, these bad ass paletas are definitely the way to get your after-dinner sweet on.

If you didn’t know, a Paleta is a Mexican ice cream on a stick and the name comes from the spanish word “palo” (which means ‘stick’) whereas the “eta” is in reference to the flat frozen item. So basically, a Paleta can be anything- a fruit on a stick, a cream on a stick or could even be a bro on a stick – that would be weird actually.

Anyway, these gorgeous paletas are custom made for Lady Carolina by the paleta gods at Chill Bro Paletas with two flavours to choose from. The Cajeta thats made with Goat’s milk & Salted Caramel and the Strawberry, Flor De Jamaica & Yoghurt Sorbet – both served with refreshing Watermelon salad.

Down for an insane Latin American feast fit for the Gods! Then you have to head on over to Lady Carolina, she’ll welcome you with open arms.

You can find them at 175/177 Lygon St, Brunswick East VIC 3057 and suggest you head on over to her website to reserve a table as she can book out quite fast.
