Almond butter is something I could eat every day, but tends to be fairly pricey to buy jar after jar in the supermarket. This homemade vanilla espresso almond butter couldn’t be easier and costs less than the store-bought version! Whole espresso beans and a small bit of vanilla extract come together with roasted and salted almonds, resulting in a creamy, flavorful, spread with no added oil or sugar.
1 1/2 cups roasted and salted almonds
1-2 tbsp whole espresso beans, to taste
1/4 tsp vanilla extract
